Two Ingredient Pancakes!


Yesterday my mom and I went with a couple of our friends to Sky Zone again! I am seriously addicted to trampolining. It's such an amazing workout, and so much fun!  This time we spent a lot of time playing extreme dodgeball which is hilarious! I ended up being the last person standing twice, which was so scary considering we were playing against teens who really knew how to whip the ball at you! I accidentally hit a little boy in the face and felt so bad!

After grocery shopping and our workout, we were so hungry.  We had a few ripe bananas, so I decided to make two ingredient pancakes. I'm sure you've seen these all over Pinterest, they are delicious!








What You Will Need:
- 2 ripe bananas
- 2 eggs

* I also like to add to the pancakes.  Sometimes I will put blueberries, chocolate protein powder or chia seeds.  Today I used a tablespoon of PB2!

Directions

The first thing you want to do is put the two bananas in a bowl and then crack the eggs into.  Give it a quick stir so that the bananas are covered by the egg.

The next step you can do one of two ways.  Some people just mash the bananas and eggs up with a fork until it mixed well.  I like to put the ingredients into my blender so that it is a very smooth consistency.  This is also when I added the PB2.

Once you have made your mix, you now want to cook your pancakes! I've made these pancakes dozens of times, and I've finally found a method that works for me for my pancakes to turn out perfectly.  I turn my burner on high and spray it with cooking spray.  Once it's heated, I spoon one tablespoon of the mixture onto the frying pan.  I let the pancakes cook on one side for two minutes and then flip them over for just over a minute.  Be careful, it's very easy to burn these!

The mix I used made about twenty little pancakes! You could definitely make them bigger, I'm just terrible at flipping them and it's easier when the pancakes are smaller!




I drizzled honey over my pancakes and served them with fresh fruit and turkey bacon! It was a delicious breakfast after  a decent workout!
